Paleo eating

Love this time of the year.

I'm the guy at the middle school and high school at least twice a week, using the football equipment that's left outside overnight. Pushing the sled, flipping tires, etc...before two-a-days start in the AM!

One percent of non-Hispanic whites in the U.S. - close to two million Americans - have celiac disease, but most are not aware they suffer the gluten-intolerance problem, according to a new study. The results back up earlier estimates of how common celiac disease is in the U.S. and Europe, the researchers say. They also support evidence that the condition is far more rare among Hispanics and blacks.
"This one...is pretty much in line with what was shown before," said Dr. Alessio Fasano, director of the Center for Celiac Research at the University of Maryland, who was not involved in the study.
Fasano said that despite how common the condition is in the U.S, he's not surprised that few people have been diagnosed with it.
"The symptoms are so vague and non-specific that it's very difficult to point to celiac disease when you have (for instance) chronic fatigue or anemia or joint pain," Fasano said.
Celiac disease is mainly a gastrointestinal disorder, and when people who have it eat gluten, they experience an immune reaction that damages the intestinal lining.
Most studies to determine how widespread the condition is have been done in Europe, so the researchers sought to get a sharper estimate of celiac disease in the U.S.
Dr. James Everhart, at the National Institute of Diabetes and Digestive and Kidney Diseases, along with colleagues at the Mayo Clinic and in Sweden, used data from a large, ongoing national study of health and nutrition.
About 7,800 people participated in the celiac survey, and gave a blood sample that was tested for signs of the immune response to gluten that characterizes celiac disease.

    Last night's post-dead lifting, 24-hour fast-breaking meal...

Wild-caught trout, egg-stuffed red peppers, boiled sweet potatoes, spaghetti squash, brussel sprouts, Kerrygold on everything and mineral water. Heaven!

What did you put on the spaghetti squash and how did you prepare it?

Microwave 3 minutes (to soften for cutting), split in half, removed the seeds, bake face down w/olive oil at 350 for about 30 minutes. After 30 minutes, turned it right-side up, seasoned with garlic salt and pepper and baked for another 20 minutes or so.

Thanks, I'll have to try it this way. We have only microwaved it.

Our WOD yesterday was 20 minutes, as many reps as possible, of back squats. Brutal.

    LeanGains pumpkin cheesecake...

16 oz fat free cream cheese
1 c fat free sour cream
    1 cup pumpkin
    pinch of pumpkin spice
    pinch of cinnamon
    2 eggs
    tbsp vanilla extract
    2 scoops vanilla whey protein
    1/2 c Stevia

Mix in a mixing bowl. Put in a pie pan. Bake at 350 for 50-60 minutes. Refrigerate for at least 2 hours afterward.

I eat paleo but this is an exception I make. This is typically added in as a post workout (weight training days only) treat.

The whole thing has 1000+ calories, about 150g's of protein and < 10g's of fat.

    Tastes awesome.

    Haha, sounds yummy.

I guess my pound of grass-fed liver w/Ghee, lemon and oregano for tonight doesn't compare :)

Dude, can't do the offal. Just not a fan but for someone who has the palate for it, bet it was great.

Made a great "meal" tonight, although it was more like a casserole.

Garlic cauliflower mash, layered on the bottom of a dish.
Sweet potato mash, mixed with a bit of Ghee as the 2nd layer.
Topped with bacon-wrapped chicken breast cooked in the same pan, so a nice 10 oz breast w/bacon fat and 6 strips.

Took a large red pepper, cut it into pieces (more like little pieces with craters) and topped it with bacon fat and let it sit for a few minutes. Two of my favorite foods, raw red pepper and bacon fat in one bite.

That had nothing to do with him being vegetarian. It had everything to do with steroid abuse and probably to some degree genetics. But mostly the steroid abuse.

Just in case you're not aware, an ongoing joke in the lifting community is about dumbasses who take up the squat rack doing bicep curls. Most of these guys never use the squat rack for anything else (like squats). This is a reverse take on it.

    I hate that too.

What's funny is that most of the guys doing it are using pussy weights. It's one thing if the rack were actually needed to support a lot of weight that a curl station might make awkward but most of these guys aren't using that much. Plus, it's called a "squat" rack. :D
