I'm currently watching through King of the Hill, which is fantastic, and it got me thinking about the best adult cartoons of all time. I haven't watched a lot (read: most) of the shows on this list, but I tried to list as many popular shows as I could.

I know I've missed out on South Park a lot, as I haven't watched it since the beginning. I probably should watch it, as I know Trey, Matt, and I have similar political views.
Of the shows I've actually watched a large portion of, Rick & Morty, Bob's Burgers, and King of the Hill are likely my top 3 (in no particular order).

Out of that list I voted South Park in it's prime. I haven't seen a lot of the shows on there, but Robot chicken and Archer are hilarious. I want to rewatch King of the Hill now that I'm older, but not sure my wife will be into it (I think it's on Hulu).
Big Mouth on Netflix is absurd and pretty funny too.

i know it's weird, but if i'm ranking my favorites, it's like this:
1. Rick and Morty
2. King of the Hill
4. Bob's Burgers
BUT. South Park is the GOAT - i never watched it in its heyday (didn't have cable) and overall it's not my favorite. but when they have a good episode, it was and is A-FUCKING-MAZING. None of the others are possible without The Simpsons, but on its own, that show just doesn't stack up with the best shows that followed it.

There are a lot of good ones on there, but I've gotta go with ATHF. Loved that show.

First 8-10 seasons of the Simpsons is the GOAT for me. It's been bad for so long though, hard to judge. Futurama was also incredible, had some hard hitting eps too like the dog ep. KotH is fantastic, but haven't seen it in prob a decade. Aqua Teen Hunger Force first 3 seasons are also terrific. S4 got super weird.

The Simpsons is 100% an adult cartoon.

Ehhh, to me it's a family cartoon with some adult jokes, not remotely like Futurama or Archer.
Or PG films can have subtle adult humor....Simpsons is more PG to me, while Futurama and Archer would be r-rated.
Yeah, I always kinda thought of the Simpsons in the same way I think of Shrek. Adults will enjoy it, and they'll pick up on some jokes that kids will miss, but generally, kids would enjoy the plots as well.

I dunno. I enjoyed it when I was like 10, and most of the stuff wasn't over my head. Didn't seem like an adult-themed cartoon the way some of the others on the list are.

South Park for me and Simpsons come 2nd. I watched South Park religiously from high school to college and thru some of my early professional life. I don't watch as much TV as I used to, but I watched a SP season a couple years ago after missing it for a few years and I didn't think it would miss a beat. They are very good at being relevant and having a pulse on our social climate. Extra bonus as Justin mentioned the creators are libertarians and thus why they bash both sides of the aisle very harshly. It's a good way to laugh at everyone. If Stone & Parker want to keep the show going, there is no doubt they will always have that high school thru college market.
