My current "to try" list is chicken parm, pot pie soup with crust crackers, cacio e pepe, homemade Snickers and rice pudding. 

We're having steak and melting potatoes for Easter, and I'm picking up sugar cookies and chocolate chip cookies from two local bakeries on Saturday.

I need to find a good comparison of the RT-340 and the Grilla Chimp. First glance I like the Chimp more, but I am getting tired of waiting. I decided on the smaller model as it's just my wife and I and we won't cook for larger groups more than a couple times a year. Also, saving a few hundred bucks over the larger models is nice.

Grilla is offering 3 free bags of pellets if you order now to make up for the wait.

Looks like they both have similar controllers.  Doesn't looks like the Chimp has WiFi and has one less probe.  You will use the WiFi and the App more than you think.  Especially on long cooks.

I like the portability of the Chimp, folding legs, base looks sturdier with the legs at an angle.

I did a herb crusted prime rib on the smoker yesterday.  Turned out fantastic.  Added smoked brussel sprouts to the plate as well.

I can’t get the pic to upload but I did a brisket   Yesterday in a completely different way and it turned out great. I usually just do 225 and let it go till it’s done. Occasionally I will wrap in foil or butcher paper if necessary. 

This time I cooked it at 325 for 2 hours till the  temp hit 141. Then put it on a baking rack in an aluminum pan covered in foil for 2 hours when the temp reached 203 in the thickest part. 
Then I separated the point from the flat and put the flat in a cooler to rest. I put the point back on for about 1:30 min at 225 for the burnt ends. 
Basically the cook lasted about 5.5 hours compared to my normal 12-15 hour cook. 
The pros were that the brisket was the most tender and most juicy that I’ve ever made. 
Cons it had less bark and less smoke. 
I think next time I am going to try to put it on the smoker at 225 and then put it in a pan when it reaches 141 and turn it up to 325 to kind of do a combination of both methods.

I made my 3rd loaf of quarantine banana bread yesterday. I finally tried Chrissy Teigen's recipe and it was by far my favorite. I left out the coconut tho (🤮).

I also had some ricotta that was about to go bad, so I made lasagna roll ups and they were great. The bonus: wayyy less work than my traditional lasagna. 

I'm going to make Disney's grilled cheese sometime in the next few days.
