    The Spicy V8 sounds good. I try to avoid beans in mine. I have a recipe from a paleo cookbook that is beanless and has both cinnamon and dark chocolate in it. I also use bison frequently.

    this post reminded me that I have some ground elk in the freezer. Elk chili sounds fan-fucking-tastic.

    After I get a deer this weekend I'm going to make some deer chili. I've never had elk chili but im sure it would be awesome. Do you do your elk chili different than you would do normal chili?

    This would actually be the first time I've made it. I'm pretty sure the parents have cooked up some deer chili before. I'd imagine you would do it the same as regular beef, I'm far from an expert, though.

    First off brainiacs its VENISON chili and secondly you don't cook it the same as beef. But I'll let you figure that all out on your own..ptomaine poisoning usually doesn't kill you.

    Cook the venison to well in a frying pan in butter and bacon fat before adding it to your chili mix. Add a dash of brown sugar to cut the acid from the tomatoes

    You can eat venison medium. Its just super lean so you have to add the fat to it yourself, which is why you cook it first

    I'd say 90% of the red meat we eat is venison

    I do my beef in the pan anyways because I only eat ground meat well done. We wrap our deer meat in pig fat...that make any difference?

    You grind it with the pork fat? If its a mix, yes that's good. If it just sits in pork fat, it will just burn off quickly.

    I know what's it's called. I've made it plenty of times and I don't do it the same as regular chili I was just curious with the elk bc Ive never done it before or had it.

    I am pretty sure that elk is very lean too...so missed with some sausage or something might help.

    I usually cook my venison with bacon. I might have to try using sausage instead. I figured cooking the elk would be about the same as cooking deer. Either way I'm going to have try it sometime. Sounds awesome.

    I add honey, also put the chili over cornbread.

    Later in can be heated up in a skillet or just eat it cold
