The Spicy V8 sounds good. I try to avoid beans in mine. I have a recipe from a paleo cookbook that is beanless and has both cinnamon and dark chocolate in it. After I get a deer this weekend I'm going to make some deer chili. I've never had elk chili but im sure it would be awesome. This would actually be the first time I've made it. I'm pretty sure the parents have cooked up some deer chili before. LJCook the venison to well in a frying pan in butter and bacon fat before adding it to your chili mix. Add a dash of brown sugar to cut the acid from the tomatoes

I usually cook my venison with bacon. I might have to try using sausage instead. I figured cooking the elk would be about the same as cooking deer. Either way I'm going to have try it sometime.
