How those 'Maters looking?

AppleThis year we only put in a couple tomato plants and they're finally ripening. We'll be planting more next year.
The GF eats the cherry ones like candy! She can have them all for herself. I'm not a fan of eating them right off the vine but I'll admit that fresh ones taste great in salsa, chili and spaghetti sauce.
Anyone else getting getting some nice maters these days?
Our jalapeno peppers are doing great too. We'll be having some awesome chili this football season! -

Belly35I plant five different types of tomatoes and also small yellow pear tomatoes (like cherry but yellow).
We've canned 25 quart of tomatoes sauce already, estimating another 20 quarts by end of season and 10 quarts of Hungarian Yellow Hot Peppers (pickled those puppies), 10 quarts of Beets, 20 loaves of Zucchini Bread…. Green beans, cucumbers, red yellow and green peppers will be ready in a week also onions. It been a good year for the garden next year we are going to stager the planting so everything does come in at the same time… </SPAN>

mcburg93Our garden got a little huge this year tons of tomatoes and just about everything else. I am so sick of canning we have enough to last us a few years now I am guessing.

THE4RINGZNot tomatoes but we had a bumper crop of our early season peppers. I canned some this past Sunday. These will taste good on a winter's Sunday afternoon.

I canned a combination of Italian yellow peppers, serrano peppers and jalepano peppers and some baby carrots for color.
To the jar I add 1/2 white vinegar, 1/4 cup simple syrup (equal parts sugar and water boiled until the sugar dissolves) and fill the rest of the jar with boiling water. I then can them in a water bath, usually boil the peppers in the jars for about 10 minutes until they seal. -

Qestion: Why not boil the vinger, sugar and water combo and pour into the hot (sanitized, out of the dish washer) jars and seal the jar with hot lids? I found that if you soak the hot peppers in straight vinger for a few hours it takes some of the heat out of the peppers .... -

I have never heard of that method of canning. I might try it next time, sounds a whole lot easier than the way I do it. Thanks for the tip. -
