I'm thinking something with beef and sausage -
dancinbear1lb beef (round for me)
1lb ground turkey breast
1 green pepper
2 jalepenos
1 serrano
1 can of green chilies
1 large can of of peeled tomatoes chopped
3-4 fresh romas chopped roughly (if you have them)
1 14 oz can of stewed tomatoes
1/2 cup to 1 cup onion
olive oil
4 garlic cloves
cayenne pepper
black pepper
3-4 tbsp chili powder
sea salt to taste
1 can kidney beans drained
1 can black beans drained
saute veggies, peppers, garlic, onion and oil....brown meat, add spices, mix well. Transfer to crock pot and add the rest of everything. Cook on low 6-8 hours or high 2-4. OR leave in stew pot to simmer on stove for 2-4 hours.
As for the meat, use 2lbs of whatever combination you want. -
Apple^^^No beans? I know a guy who always picks the beans out of my chili. Your recipe looks tasty, but how hot (spicey) is it?
-
wes_mantoothYeah, I got to have beans in my chili. Also, I need to use up some of this deer meat that I have in the freezer, so I need to come up with a deer chili recipe.

davehere's mine, just made some this weekend.
1 lb ground beef
6-10 slices of bacon
3 cans tomato sauce
3 cans diced tomatoes
2 cans beans
1/2 to 1 onion
1/2 to 1 green pepper
1/2 small can chipotle peppers (about 4-5 peppers and the sauce)
2-3 jalapenos
2 cloves garlic
4 spoons chili powder
1 spoon cumin
a few ounces hot sauce
to make it without using too many pans you can do this all in one pan seperately
1. cook ground beef
2. cook bacon (then chop and add to pot)
3. saute chopped green pepper, onion, and garlic
just vary the chipotles, jalapenos, hot sauce, and chili powder depending on how spicy you like it.
This barely fits in a 5qt pot. -

oh yeah, hahaha, i forgot those. i'll edit it
And it's not too spicey if you de-seed the peppers. I usually put about half the seeds in. The cayenne isn't much, just for the afterburn. I just made a shrimp creole for the first time tonight and got a little carried away with the cayenne face is burning. -

This is the one i am making minus the habanero. I have major indigestion problems so really hot stuff like that is a no go, even though I love to eat it.Fab1b wrote: 1 1/2 pounds ground beef

And my freaking eyes are burning from mincing fresh garlic. -
I Wear PantsMantooth:
Ingredients
* 4 tablespoons unsalted butter
* 1 red onion, chopped
* 4 cloves garlic, minced
* 4 tablespoons dark brown sugar
* 3 cups red wine
* 4 tablespoons red wine vinegar
* 4 tablespoons tomato paste
* 4 cups low-sodium chicken broth
* 1 teaspoon ground cumin
* 1/2 teaspoon cayenne pepper
* 1/2 teaspoon chili powder
* 2 tablespoons chopped fresh cilantro
* salt to taste
* 4 tablespoons canola oil
* 10 slices cooked bacon, diced
* 2 pounds venison stew meat, trimmed and finely diced
* 2 cups black beans, cooked and drained
Directions
1. Melt the butter in a large pot over medium heat. Stir in the onion and garlic, and saute for 3 to 4 minutes. Stir in the brown sugar and saute for 2 to 3 more minutes. Then stir in the red wine, vinegar, tomato paste, chicken stock, cumin, cayenne pepper, chili powder, cilantro and salt. Simmer for 30 to 35 minutes, or until the mixture is reduced by about half.
2. Meanwhile, heat the oil in a large skillet over medium-high heat. Stir in the bacon and fry for 3 to 4 minutes, or until the bacon is browned. Move the bacon to one side of the skillet and add the venison to the empty side of the skillet. Season the meat with salt to taste and saute the meat for 15 minutes, or until well browned. Stir in the beans and toss all together. Transfer this mixture to the simmering pot.
3. Mix everything together thoroughly and let simmer for about 20 more minutes.
