Recipes: Guacamole

    So I've been on a guacamole kick lately, and as such, I've started making my own.

    Does anyone have a good guacamole recipe? Basically, all I'm doing is buying avocados, slicing them, scooping out the "innards" (for lack of a better word), stirring/mushing them together in a mixing bowl, and then simply eating. As you can imagine, it's a little bland / un-exiciting.

    Soooo... I turn to the Chatter. How do you prepare your guacamole?

    I think most mix salsa in theirs, right? My issue is I'm not a fan of tomatoes (although I do love me some ketchup), therefore I've been staying away from mixing salsa in it because there's a ton of tomato chunks in salsa.

    Add salt, lime juice, onion, cayenne, cumin, cilantro, and for me personally, some garlic. Maybe some jalapenos as well if you like it spicier.

    The salt, lime juice, cayenne, and cumin sound good. I was gonna guess salt anyways.

    I don't care for onions either, and I think cilantro is AWFUL and by for the most overused / overrated ingredient ever. I LOATHE when restaurants load up an entree with cilantro. To me, it just says they don't know how to cook.

    That's not guacamole bro. That's avocados.

    Guacamole has other ingredients.

    I like this one:

    Chipotle Guacamole Recipe
    Individual sized recipe:
    2 Hass Avocados
    1/2 of a Jalapeno pepper, seeded, and minced
    1/4 of a red onion, finely chopped
    2 heaping Tablespoons of Cilantro, finely chopped
    1/4 of a lime, juiced
    1/4 teaspoon salt

    Combine all of the ingredients into a bowl, and mash together until smooth. Add additional lime juice or salt to taste. For extra spicy guacamole, you can leave in the jalepeno seeds!
    Notes: This recipe is an approximation based on the original Chipotle recipe below. Please use it as a base for your guacamole creation, and feel free to make improvements based on your own personal preferences.

    Chipotle's Batch Recipe:
    Remove stems and stickers from 48 avocados, wash for two minutes. Cut avocados in half, remove pit, scrape out the good stuff.

    Mash avocados in large mixing bowl. You don't have to get it to the final consistency yet, but it's easier if they're at least partially mashed at this point.

    Now for the other ingredients. Add 2-1/2 cups cilantro, 2-1/2 cups chopped red onions, 1/2 cup chopped jalapeno, 1/2 cup lemon-lime juice, and 3 tablespoons of salt. Continue mashing until smooth.

    When you go to store the guac, put a layer of plastic wrap directly on the guac and squeeze the air out, then put another layer of plastic over whatever container you're using. This keeps the guac from oxidizing and turning all brown. Depending on how long you keep it in the fridge, the top might turn brown anyway, so just skim off the top layer before serving.

    To each their own, but I love me some fresh cilantro on tacos. Corn tortilla (soft), queso fresco, lime juice, and some kind of meat ... that is an AWESOME taco.

    do what IWP says. Was just about to post it. Put less cliantro in it if you are not a big fan.

    So far so good .. however a little bit of Real Mayo is required (teaspoon or two) not much
    The MAYO helps smooth out the Avocado making it creamy and holds favor

    Tastefully Simple as the best Guacamole mix I've ever tasted. You just add it to the avacados. Then I add lime juice. Best ever.

    My Guacamole recipe:

    Haas Avocados
    Roma Tomatoes
    Red Onion
    Minced Garlic
    Cilantro finely chopped
    Sea Salt
    Pepper
    Lime Juice(used to slow oxidation process)
    Jalapenos(Only if I'm just making it for myself)

    I just put as much or as little of each that I need to get the taste I want.

    Trick of the trade. Keep a couple of the Avocado seeds to put back in the bowl when you are done mixing everything, it'll keep it green longer, because it goes bad quickly.

    Not sure if this deserves its own thread, but does anyone have a good salsa recipe? I've just been chopping up tomatoes and eating them with tortilla chips. It tastes pretty bland and boring.

    If you don't like tomatoes or onions, you don't like quacamole, cuz those are the two of the three main ingredients. Just doctor your avacado up like suggested.

    I use basically the Chipotle recipe listed above, but I have found using both lime and lemon juice makes it test more like Chipotle.

    Also, I sometimes use the the cilantro that comes from a squeeze tube. It makes soft and tender like Chipotle's as well.

    Cilantro is about the best thing that grows. I'll eat it on about anything. That and oregano.

    Another tip: blending your guacamole in a food processor will keep it fresh longer than just mashing them up. Not sure why but it lasts DAYS longer in the fridge when made w a processor.
