It's Chili Season

    Just made a mean pot on Monday night have have had it for 5 meals already. Only half the pot is gone, and looking to close out the week.

    How do you like your chili, and do you have any special recipes?

    I'm not a recipe guy, but just buy what I think looks good, then throw it together. Here is what I put in my batch:

    - Bob Evans hot and spicy sausage log
    - 1 lb of beef
    - 1 large can of kidney beans
    - 2 small cans of extra hot beans
    - 1 small can of diced tomatoes w/ green chilies
    - 1 large can of tomato juice
    - 2 sliced up jalapeños
    - 1 half cookin' onion
    - Few sprinkles of dark chili powder
    - Plenty sprinkles (to taste) or extra spicy chili powder
    - A few splashes of worcestershire sauce
    - Salt/Pepper/Nature's Seasoning to tast

    I honestly mix it up every single time. It is usually juice, tomatoes, meat, beans, seasoning, onions.

    I use tomato sauce instead of juice and throw in some garlic salt, cinnamon powder, cajun pepper seasoning, Frank's Red Hot sauce (and/or tabasco), and habaneros

    I honestly don't know what all my wife puts in it. I do know that she does it differently; traditional, white/chicken.... She always makes it spicy, and that's #1.

    Gotta have saltines, shredded cheese (melted), a pinch of sour cream, and Frank's.

    Never thought of putting spicy sausage in mine, thats a brilliant idea.

    Just made some on Saturday.

    I use stew beef and not ground.

    3 cans of diced tomatoes, 2 chili spiced.

    2 cans of tomato sauce.

    4 different kind of beans.

    3-4 jalapenos diced finely along with an onion, 4 banana peppers, and 6 cloves of garlic all diced finely, I let them sweat and get soft.

    2 teaspoons of honey and sugar.

    ample amounts of ancho, mexican and chipotle pepper; along with a little bit of cumin and cinnamon.

    A few dashes of worchestshire and Texas Pete.

    I let it all simmer for about 2 hours and its pretty good.

    Just do not use the spoon you scraped out the seeds from the jalepenos with to try it. OUCH!

    Make mine with ground bison...no beans.

    Pretty much your basic chili with whatever herbs and spices are in the cabinet. My secret ingredient is A1 sauce. Adds a nice little touch.

    I made plain ol' chili last week, but I make several variations depending on what my husband wants. One version I use steak and bacon and another I use sausage and hamburger, but add a can of cream of mushroom soup and a block of velveta. But I always use tomato sause and a jar of salsa.

    Think I usually make it with tomato paste (maybe I use puree?). As for the heat it depends on what I've got around and what I'm feeling. Sometimes I don't really spice it much at all. Other times it's loaded with habaneros.

    I cook mine in a skillet on a stove. But I will eat it cold.

    I don't eat it much anymore but I just like my plain. Diced tomatoes, kidney beans, and hamburger.
