Recipe Help

    I seriously need help with some new cheap recipes, any meatless varieties the most. We seem to go through the same stuff every two weeks and it gets old really fast. Any help appreciated.

    We have the usually boring spaghetti, mac and cheese, beans, etc. etc. Salads, I seriously can't think of anything else to fix that doesn't have some kind of meat in the dish. We're not vegetarians, just want some variety and relief from the same boring meat dishes.

    Here are a couple of things we use.

    Mac and cheese burritos with lettuce and salsa.

    White rice rolled in seaweed leaves with soy Ginger dip.

    Fried potatoes with shredded cabbage.

    Chopped vegetables (frozen stir fry mix) , stir fried with rice served over crunchy chow mein noodles.

    Cut up Chicken Breast
    Cream of Chicken
    Frozen bag of Broccoli
    Cheddar Cheese on top
    bake for about 30 Min.

    I know you said no meat but this is the closest one I could think of.

    We make zucchini tacos a couple of times a month here - strips of zukes (about the size/shape of pickle spears) dipped in egg and panko breading and breifly fried in VERY hot oil. Serve 'em on corn tortillas with spicy pico, slivered cabbage and sweet onion, and (if you like) a tangy sauce (we use Marzetti's Light Cole Slaw mix with a bit a cayenne pepper and lime juice mixed in). It's stuff you can buy and use in other recipes, too.

    Saw a show the other night where they had zucchini nachos. It was everything you typically have on nachos, but the fried zucchini was used as the chips. Looked delicious!
