Go4alOngbOmBStuffed bell peppers made easy
Ingredients: 1/2 fresh onion, 8 bell peppers, 1 lb of hamburger (I use deer) 2 bags of motzerella cheese, a jar of mild salsa, a jar of original spaghetti sauce, a jar of Louisiana hot sauce and a box of minute rice.
Prep - Chop 1/2 an onion fine, gut 8 bell peppers and half them.
Cooking - Boil the peppers in a pot until they are almost turning soft (usually 20 minutes)
Brown and drain 1 lb of hamburger in a skillet with your chopped onions and the heads (tops) of your bell peppers, in the meantime make 3 cups of minute rice on the stove.
Add 1 can of Mild Salsa to the the hamburger, then add 1 jar of regular spaghetti sauce into that. stir constantly until warm.
Dump the mixture of Hamburger salsa and rice into a large bowl and stir.
Add Louisiana Hot sauce to taste (I suggest 1 cup or more, but I like the flavor of it)
Mix in one bag of motzerella Cheese to that bowl mix and stir.
Place the shells of the peppers that you boiled into a baking dish cover them with the rice, and cover that with the second bag of motzerella.
Bake at 300 for 20 minutes.
BAM, thats my local famous Stuffed peppers, takes less than an hour to make, and I promise you they will come back for em.
If you want to make them the night before, put everything in the pan, put it covered in your fridge, then the next day before you go bake it at 350 for 30 minutes to warm it up.
Just my suggestion, it will take a bit of time, but you will wow the pants of your co-workers with your cooking skills -
stroupsI like the desert option because nobody really does desert in my office, some girl always brings a dip and she is notorious for buffalo chicken dip(quit amazing if I might add). My buddy got like 15 or 20 little Wendy's chillies and threw them in a crockpot one time. Of course he didn't tell anybody it was from Wendy's and just sat back and laughed.

stroupsThe stuffed pepper sound really good. I leave work at around 7:30 in the morning and people don't start eating until about noon. Would those stay fresh and not get soggy?

Go4alOngbOmBYep, you boil the peppers, Im telling you what, it makes a GREAT Tortilla chip dip also, if you leave out the pepper bottoms, and can be kept well in a crock pot. They would be just fine. If you opt for the pepper dip (which I have done) just gut and chop three full peppers into the mix.

gorocks99Piquillo peppers stuffed with goat cheese. Super easy if you get the peppers from an antipasto bar and just stuff them w/ goat cheese the morning of. Works great as an appetizer.

muffyYou don't need to pre-cook the beef. It will cook in the peppers in the crock pot. You can let them cook from 4 to 8 yours and they will be fine. IF on 4 hours, cook on high and if 8 hour then cook on low
Do you have a 6 qt crock pot? If so, cut the tops off the peppers (some people cut them longways, instead cut the tops off and clean the seeds out). Par boil them until tender but not completely cooked. Make your meat mixture (ground beef, a little catsup or commercial spagetti sauce or diced tomatos from a can, 1 egg, salt & pepper to taste). Fill peppers. I use Mid's sausage spaghetti sauce (it really is like homemade but get the sausage, not the meat sauce). I use some of the Mid's in the meat mixture. Coat the bottom of the crock pot lightly with Mid's. Put the stuffed peppers in - stand them upright. Cover the tops with the rest of the Mid's sauce. Put lid on crock pot, turn it on low and let it go. Do not take the lid off until you're ready to serve it. You can let it cook on low all day but be sure to coat the bottom of the pan with some sauce and cover the tops of the peppers with more sauce, it has to have that moisture. You an sprinkle with shredded cheese if you want and could mix some in the meat mixture but I never do. -
muffyGrape salad - very easy and people love it. I never have any left to take home.
4-5 lbs SEEDLESS grapes
16 oz cream cheese, softened - you can buy it already soft rather than the solid bricks.
16 oz sour cream
3/4 c sugar
Blend the softened cream cheese, sugar and sour cream until completely smooth. Turn your mixer on and just let it go for several minutes, scrape the sides of the bowl down every so often.
Fold grapes in to cream cheese mixture, chill and serve. Quick and really good. -
muffyI double this recipe, we love it. Cook it on the stove, pour it in to a 6 qt crockpot and let it go on low as long as you need.
Quantities below are for 1 batch, as I said I double it and use a 6 qt crock pot
1 lb bulk pork sausage (when I double it I use 1 mild and 1 hot) - use Bob Evan's or whatever
1 c coarsely chopped onion (you can easily use chopped frozen onions)
4 c 1/2" cube peeled potatoes
1 tsp salt
1/2 tsp crushed marjoram
1/8 tsp pepper
2 c water
1 can cream style corn (17 oz)
1 can whole kernal corn, drained (17 o)
1 can evaporated milk (12oz)
Doesn't sound very good does it? It is great. Eat it once you'll find yourself wanting it more and more. -
muffyReally easy cake, don't even need a mixer.
Bake 350 degrees, 35 to 45 minutes. "Toothpick" test won't work on this cake, too moist.
2 cups flour
2 cups suagr
2 tsp baking soda
2 eggs
16 oz crushed pineapple (with juice) - no more than 16 o or it will be too soggy
1 cup chopped nuts
Frosting (either buy cream cheese frosting at store or make it yourself)
1 stick margarine, softened
8 oz, cream cheese, softened
2 cups powdered sugar
1 tsp vanilla
1/2 c chopped nuts, colored sugar, or sprinkles (optinal)
I add the nuts and the sprinkle some one top to make it clear there are nuts in it - in case any one is alergic to nuts.
Stir all the cake ingredients together with a spoon - not a mixer.
Bake in a greased 9x13 pan.
COOL - do not frost until it is cooled.
Mix frosting, blend well with mixer and spread on cake
Top with nuts, colored sugar or sprinkles. -
muffySaw this on local TV a couple weeks ago, think it was Channel 10. I made it and we liked it. Needs to cook in crock pot 3-4 hours so that it thickens correctly.
Crockpot Mac & Cheese
16 oz elbow macaroni, cooked
2 13 o cans evaporated milk
2 c whole milk
1/2 c melted butter or margarine
4 eggs, slightly beaten
8 c sharp cheddar cheese shredded
1/2 tsp salt
1/2 c parmesan cheese'
In 6 qt crock pot, combine all ingredients except 2 cups f the cheddar cheese and the parmesan cheese.
Sprinkle remaining cheeses on top, cover and cook on low 3-4 hours. -

Miracle Whip
honey mustard
Cook and cool macaroni. While it is cooking, chop all the scallions.
Put macaroni in a large dish. Add a couple large scoops of Miracle Whip. Squirt in a lot honey mustard - you want to be able to taste it, it gives it a little bit of a kick. Store in most of the scallions, retain a few. After stirring, sprinkle remaining scallions on top.
I can't tell you quantities, I made this one up myself when I needed something to take to a spur-of-the-moment dinner. The trick is being sure to get enough honey mustard in it or else it will be horribly bland and no one will eat it. -
muffyA couple other quick things.
Sloppy Joes: Brown and drain a couple lbs of ground beef. Crumble in to fine pieces as it cooks. When you drain it you can rinse it with water - it will wash most of the fat away and will not change the taste - honest. Stir in a can of manwich for each lb of beef. Pour in to a crock pot, take some buns.
Meat balls. By a bag of frozen meatballs (GFS and Sams are great sources but regular stores have them too). Buy a big bottle of your favorite BBQ sauce. Spray the crock pot, coat lightly with bbq sauce (the bottom). dump meatballs in, pour the rest of the bottle of bbq sauce over the meatballs. Stir. Put lid on, turn on high until they are cooked, then turn on low. They can be eaten that way or take sub buns and mozzarella cheese for sandwiches. -

Bake a Devils Food cake mix according to package. As soon as it's done, poke holes in the cake with the handle of a wooden spoon. Pour 1 can of sweetened condensed milk and a jar of Mrs. Richardson's butterscotch/carmel ice cream topping over the cake. Let it cool then top with cool whip and crushed Heath bars.
And yes, it may actually be better than sex.
