Cooking Fish?

    I like fish, but it's always been something I only get at restaurants. I decided to pick up a couple Tilapia filets the other day when I was grocery shopping. I am just looking for some suggestions on the best way to cook it, seasoning, etc.....

    Tilapia is good, I like it on the grill. Get the grill real hot, season the fish with just a little salt and pepper, rub the grill grates with a little vegetable oil and slap on the fish. A couple of minutes on each side and its delicious. It takes a few times to get used to cooking it. I tried to flip to early once and half the fish stayed on the grates. lol

    I like to heat a skillet with some olive oil and lime juice and sear the fish on both sides. Top with whatev you like after that. Last Friday we had tilapia pan seared with strawberries, pineapple, kiwi, and red whine vinegar salsa on top, fantastic!!

    Rinse fillets, place on aluminum foil and cover lightly with olive oil and seasonings. Fold the foil up, bake at 420 for 20 minutes.

    I never eat Tilapia because I think it is the most boring fish imaginable. It simply has no flavor except whatever flavor you impart to it. If I'm eating fish, I want it to taste like fish.

    That being said, I like to bread and pan fry my fish.

    Set up three bowls. One with flour, one with equal parts egg and water, and one with panko bread crumbs (you could use regular bread crumb or crush up some saltine crackers, but I like panko break crumbs best). Rinse the fish and dry it with a paper towel. Cover the fillets with flower, then through the egg wash, and finally through the bread crumbs. Make sure you use one hand for the flour and egg, and the other for the bread crumbs, otherwise both hands will become covered and goopy. Add some salt, fresh ground black pepper, and any other seasoning you like (I've found that fresh dill goes great with fish). Place them on a frying pan with some hot oil (vegetable or olive, although I'd go with vegetable because it's cheaper and the oil doesn't impart much flavor). Fry for a few minutes on each side until the crust is nice and crispy. If needed, place the fillets on a baking sheet and finish in a 350 degree oven to cook through.

    Note: Alway wash the fish in cold cold water and dry with a paper towel
    Keeps the fishy taste from being cooked into the seasoning
    Alway have fresh lemon to squeez on the fish durning cooking and after when served.

    Heat some oil in a skillet, put some flour on a plate, season flour with salt and pepper, dredge fish in flour on both sides and fry in the skillet! mmmmmmm

    Everyone who uses Flour should try using Bisquick instead makes the fish a more golden brown , and tastes better too
